How should I serve absinthe?
According to the traditional ritual, absinthe must be mixed with water that has passed through a lump of sugar to diminish the spirits bitterness. There are, nowadays, many cocktails containing absinthe that are served with or without the sugar.

Place the Absinthe spoon on the edge of a tall and large glass
Place the sugar on the spoon and gently pour the Absinthe over the sugar
Then, gently pour some fresh water over the sugar, drop by drop, so as it melts slowly.
Make sure you pour five to seven times as much water as the Absinthe.
